My favorite part about my job is the students. It is especially exciting when they try new things like vegetables or healthy foods that they may not have previously liked. It makes me smile whenever one of them tells me how much they liked something! I really love that I am able to fix real food for the kids that they enjoy! It's a gift to be a part of their school day.
Hi, I’m Stephanie Blancato.

Arayes- Arayes are a popular street food from the Levant region of the Middle East. Traditionally made by stuffing a pita with seasoned lamb and then grilling into a crispy pocket. You can think of it as a thin, crispy Mediterranean seasoned hamburger! I will be preparing the Arayes for our lunch using turkey meat, grated onion and tomato paste. The spice combination includes garlic, salt, paper, cumin, paprika, allspice, coriander and cinnamon. They will be served with a Tzatziki sauce and of course ketchup!
Patates Lemonates- A popular Greek side dish. Potato wedges are braised and seasoned with lemon, oregano and garlic.
Roasted Chick Peas- Chick peas are dried, seasoned and roasted in the oven until they are crispy. They taste similar to a seasoned corn nut or popcorn.
Sicilian Chocolate Olive Oil Cake- This can simply be described as a chocolate cake that uses olive oil. Ingredients include egg, AP flour and cream.
-
Jollof Rice (Nigerian Style)-Jollof Rice is traditionally a one pot comfort dish containing long grain rice, tomato, onions and spices. The rice simmers in a tomato stew base with other
ingredients including: onion, peppers, garlic, thyme, ginger. For our lunch we will be serving Jollof rice with chicken.
Fried Plantains (Dodo)- This is an incredibly simple dish; it is simple yellow plantains that are fried with a pinch of salt added at the end of cooking. The plantains taste like bananas with a
little less sweetness. When they are fried they become caramelized and soft in the middle!
-
Maple Glazed Three Sisters- The three sisters are a combination of corn, squash and beans. For our lunch we will feature butternut squash, yellow corn and green beans (not traditional, but more kid friendly!). The 3 vegetables will be roasted and coated in a maple glaze that provides a delicious sweetness! It will be accompanied by a wild rice blend.
Cherokee Blueberry Honey Cake- This cake is traditionally made with huckleberries, but we will be substituting blueberries that provide tartness combined with honey that adds a light sweetness. Combined, these ingredients provide a delicious, not too sweet cake!
